How we source

Origin is a place, not a flag on a label.

Most green coffee is sold by country. A country is not a flavour. Elevation, varietal, processing and the specific valley do the work — so that is what we publish, and what we will not publish is anything a source cannot support.

Elevation & flavour

The one axis that organises the whole trade.

Altitude drives bean density, and density drives how a coffee behaves under heat. It is also what most producing countries grade on — SHB in Guatemala, SHG in Honduras, screen-linked grades in Colombia and Brazil are all, at root, altitude proxies.

The one systematic study of a single origin we could verify — 60+ GPS-tagged Puerto Rican samples — found altitude worth roughly two cupping points across the bands.

Read this as a density tendency, not a promise. Varietal, processing, soil and mill work move a cup as far as altitude does — which is why every Cafentity lot carries its own cupping notes rather than inheriting the band's.

Technical sheets

Every lot arrives documented.

One sheet per lot, issued at contract and updated on arrival. It is what your QC needs to book the coffee in, and what your customers need when they ask where it came from.

Grading reference

Nine origins, nine different ways of saying “good”.

Grade names do not translate across borders. SHB is an altitude band, Supremo is a screen size, and NY 2/3 is a defect count — they are not comparable, and a supplier who implies they are is selling you something.

What roasters ask us first.

What green coffee origins does Cafentity sell?

Cafentity sells green coffee from nine origins: Puerto Rico, Colombia, the Dominican Republic, Brazil, Guatemala, Honduras, Panama, Costa Rica and Peru. Within each origin we contract inside named growing regions and appellations rather than buying by country mark — 64 mapped regions in total, from Café de Valdesia in the Dominican Republic to Boquete in Panama's Chiriquí highlands.

What is the difference between SHB, SHG, Supremo and NY 2/3?

They measure different things. SHB (Guatemala) and SHG (Honduras) are altitude bands — roughly 1,350 m and above. Supremo and Excelso (Colombia) are screen sizes: Supremo is at least 95% retained over screen 17. NY 2/3 (Brazil) is a defect count — Tipo 2 allows four defects per 300 g sample. A Brazilian designation stacks three separate axes: type, screen and cup, as in “Santos NY 2/3, screen 17/18, Strictly Soft Fine Cup”.

Can I buy a single bag, or is there a minimum order?

Both. Home roasters and small roasteries buy single bags and small lots from the shop at listed prices. Wholesale buyers order by the pallet, the container or on forward contract. [INSERT: MOQ and price bands]

Does every lot come with a technical sheet?

Yes. Each lot ships with a sheet covering producer and mill identity, region and altitude, grade and screen distribution, moisture, water activity, density, defect count on the origin's own scale, SCA score with descriptors and the sample roast profile, plus harvest date, processing method, lot ID and ICO mark. The sheet is issued at contract and updated after the arrival re-cup.

When does each origin arrive?

Harvest runs roughly August–January in Puerto Rico, October–May in the Dominican Republic, November–April in Honduras, December–April in Guatemala, May–September in Brazil, and in Colombia twice a year — September–December in the centre and north with a April–June mitaca, while the southern departments run March–June as their main crop. Panama runs December–March, Costa Rica November–March, and Peru April–September with the peak in June and July. Arrival at warehouse follows by roughly two to four months.

Where does the origin data on this page come from?

Every figure is sourced from a national coffee institute, a government or appellation document, or a USDA report — Anacafé, IHCAFE, the Federación Nacional de Cafeteros, USDA FAS and NASS, the Valdesia PDO and Barahona DO specifications, Ley 78-2019 in Puerto Rico, and INPI's Brazilian geographical indications. Sources are listed at the foot of this page. Where a figure could not be verified, or published sources conflict, the page says so instead of picking a number.
